Sous Chef- University Catering


The University of Notre Dame (ND.jobs) is accepting applications for a Sous Chef- University Catering.

Applications will be accepted until 10/17/2017.

This position is responsible for planning and directing food preparation in a kitchen. Quality and production logistics will play a large part in this role. This will involve a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen and seizing control of a situation at a moment's notice. The sous chef may also need to effectively discipline under-performing staff members, as well as provide incentives for staff members to go above and beyond the expectations of their particular chef roles. Outside of the kitchen, the sous chef may be responsible for staff scheduling, food purchasing, and, have a hand in apprenticeship development schemes as well.

Sous Chef - University Catering's responsibilities will include:

1. Operations. Working with the Catering Chef, administrates and coordinates the operational plan. Directly leads the culinary team on the floor in the kitchen in the preparation of all foods produced

2. Team Management: Observe and assess/evaluate employees technical skills, identifying areas of improvement and then facilitating the needed training working with and under the direction of the Catering Chef. Works together with Catering Chef on staff scheduling and produces daily cooking timelines and production schedules.

3. Food Production Quality: Inspects completed food products to insure they meet or exceed standards of quality and appearance; Conducts continuing analysis of food procedures and makes necessary changes to improve quality of products and operational efficiency. Imparts expectations of quality to production staff to ensure consistency in standards.

4. Inventory Management: Daily works together with Catering Chef, Storeroom Steward and team, Assisting in purchasing, maintaining appropriate inventories, and staff scheduling.

5. Sanitation and Safety: Directly oversees the teams daily sanitation procedures of all kitchen equipment and kitchen facilities. Reports all equipment issues as it relates to service and safety.

Minimum Qualifications:
Associates degree in Applied Science or Occupational Studies or a graduate of a certified apprenticeship program or up to 3 years of college or technical school. 3 to 4 years of experience working all culinary stations in a full service menu kitchen. Must have good leadership skills and the propensity to engage with the team. ACF certified Sous-Chef, ServSafe certification, all leadership and supervisory seminars offered by the University including FMS and C-board training. Maintain a neat, clean and well-groomed appearance to professional standards.
